Brigerhof Sukho Thai
The restaurant was opened in the center of Brig in 2004 and in July 2007 we moved to the Brigerhof next to the Simplonhalle near the train station. The restaurant has a separate room with approx. 40 seats. The room is non-smoking. The restaurant has a curved bar, special bar tables and stools, as well as a large garden terrace with a children's playground.
Let yourself be enchanted by the Thai flair. All Thai dishes are of course also available as take-away. The right thing for a short lunch break or at home.

Thailand cuisine
Thailand cuisine is internationally renowned. Whether chili-hot or comparably mild, the harmony in the composition is the leitmotif of every dish. Thai cuisine is essentially a combination of centuries-old Eastern and Western influences, harmoniously fused into something typically Thai. Different accents are added depending on who is cooking the Thai food, who it is being cooked for, for what occasion and where it is being cooked. The dishes can be refined and adapted to suit the individual palate. Originally, Thai cuisine reflected a way of life closely linked to water. The main ingredients of the dishes were animals living in water, aquatic plants and herbs.
Originally, large pieces of meat were avoided in Thai cuisine. However, subsequent influences introduced this use into Thai cuisine. Due to their Buddhist background, the Thais chopped up the pieces of meat and mixed them with herbs and spices. The traditional cooking methods of Thai cuisine were braising and baking or grilling. Chinese influences introduced the methods of roasting, stir-frying and deep-frying. Since the 17th century, Portuguese, Dutch, French and Japanese culinary influences have played a role in Thai cuisine. Chilies were introduced to Thai cuisine in the late 17th century by Portuguese missionaries who had learned to appreciate this spice during their service in South America.
Thailanders adapted foreign methods to their own circumstances and substituted some ingredients. For example, pure butterfat used in Indian cuisine was replaced by coconut oil, and coconut milk replaced other dairy products. Overly strong pure spices were toned down and refined with fresh herbs such as lemongrass and galangal (a type of ginger). Gradually, fewer spices were used in the preparation of Thai curries, while more fresh herbs were used. It is widely known that Thai curries are very spicy, but the burning sensation in the mouth subsides quickly, whereas curries from other countries with intense spices retain the burning sensation in the mouth for longer. Instead of serving the dishes one after the other, all the dishes of a meal are served at once so that the diner can try different combinations of dishes and different flavors.
A complete Thai menu should consist of a soup, a curry dish with spices and a dip with accompanying fish and vegetables. A spicy salad can replace the curry dish. The soup can also be spicy, but the curry should then be replaced by a mild dish. What is important is the harmony of taste, the composition of the individual dishes and the meal as a whole.

On 5 evenings, we will introduce you to the secrets of Thai cuisine. You will cook together in a small group and sit together at the end of the evening and eat what you have cooked. This is also a great way to make new friends.
