It's Erdal, the Boss of the place, who is behind the transmission of his know-how to his crack team. His passion is for the authentic cuisine of his region, and above all, to present us with all the authenticity of the recipes he grew up with. What sets La Broche apart from other restaurants is undoubtedly the quality of the ingredients on the menu, and above all the meat.

On the brochette side, it's Aslan, one of our region's rare artisans, who busies himself in his production kitchen in Plan-les-Ouates, preparing the meat. It's all in the family recipe, handed down through the generations: the choice of cuts and their quality, the preparation of spices, the marinating of the meat, the marinating time. The meat is prepared using a continuous cooling system to guarantee hygiene and to preserve all its qualitative and gustatory properties.
